German Apple Oven Pancake

This was a really tasty and fairly quick breakfast. Originally I had planned on making regular pancakes, but then I found this recipe and decided it would be tasty!
My husband and I both loved it, and it was really tasty served with some smoked beef sausage and drizzled with maple syrup.
German Apple Oven Pancake
1/2 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
2/3 cup half-and-half
2 large eggs
1 teaspoon vanilla extract
1 tablespoon unsalted butter
3 medium granny smith apples, peeled, cored, quartered, and sliced 1/4-inch thick
1/4 cup packed light brown sugar
1/4 teaspoon ground cinnamon
powdered sugar for dusting
Adjust an oven rack to the upper-middle position and heat the oven to 500 degrees F. Allow the oven to heat for at least 15 minutes before baking the pancake. In a blender or food processor, blend the eggs, sugar, half and half, vanilla and salt for about 15 seconds. Add the flour and blend until the mixture is smooth with no lumps, about 25 seconds.
Melt the butter in a 10-inch ovenproof nonstick skillet over medium-high heat. Add the apples, brown sugar, and cinnamon and cook, stirring often, until the apples are golden brown, about 8 minutes.
Quickly pour the batter around the edge of the skillet first, then over the apples.
Place the skillet in the oven and immediately reduce the oven temperature to 425 degrees F. Bake until the pancake is brown and has risen about the edges of the skillet, about 16 to 17 minutes.
Loosen the pancake edges from the hot skillet with a heat-proof spatula and flip the pancake onto a large plate or serving platter. Dust with powdered sugar, cut into wedges, and serve immediately.

Haha! I have to try this someday; I’ll just have to learn how to bake first. It’s a very sweet and healthy way to start your day right, especially if you have a long week ahead of you. Dang! I can’t stop drooling. I have to get my fix of this German Apple Oven Pancake!

We sprinkle ours with a little cinnamon sugar and lemon juice.
VERY good!! I added cardamom and ginger
I was disappointed, it failed to rise and was just a thick batter with apples. Tasted okay but I won't be making it again. There are much better recipes for similar pancakes on Pinterest.
What is "half and half" ? Sorry I can't translate this ingredient.

Absolutely delicious. Quick and easy to make. Try adding a dash of brandy to the apples on the pan. The whole family loved it. Will make it again and again and again.
This recipe is so easy and fast! I love making it for my elderly neighbor next door. It's just me at home and great for leftovers for both of us!

Half and half is cream...usually used in coffee. Sometimes it is used in recipes like this one.
For this recipe alone you should learn to cook. It is truly rewarding and you know what's going in your food.
Can it be made the night before and reheated in the morning or microwaved?
It wasn't either baked long enough, or perhaps your oven thermostat is off. I've made german pancakesany times, and it's never failed. Don't give up! They are really good!

You will find it where the whipping cream is in the dairy case. I use plain milk like we did in Germany & cooked the apples in regular sugar with cinnamon. It always came out perfect.
The batter can be made ahead in a blender and stored in the fridge, but I wouldn't cook the apples or pancake ahead. Microwave would make it rubbery.
It's in the oven baking right now and out it came. Looks wonderful & smells awesome. A corner taste, marvelous. I used my cast iron 10" pan & to get it out I just put my big plate over the whole thing & tipped it over. Came out perfect!! Thank you for sharing this easy delicious recipe. Definitely a keeper.
